Acar

Acra, a type of salad made in Malaya Cuisine is one of the most popular salads in Singapore.

 Acar refers to a type of salad made in Indonesia, Malaysia as well as Singapore. This salad dish is made from different vegetables such as yardlong beans, carrots and cabbages. These leafy green veggies are pickled in vinegar. Dried chillies are also added to the salad to enhance the taste.  Later the vegetables are topped with ground peanuts. In Singapore you can get a number of varieties of Acar. The varieties of Acar include acar awak or Nonya acar, as well as Malay acar. Acar awak is one of the most elaborate varieties.  This contains a number of other vegetables like eggplants. Aromatic spices are also used in the pickling mix. This salad is served as a condiment and is generally eaten with a main course. 

The process of preparation of the salad as well as the ingredients varies from country to country. Some people add sugar and vinegar to the sweet and sour pickled mixture. Lemongrass and gingers also added to enhance the aroma of this spicy salad.
